Pizelle cookies Since Easter is upon us here is a recipe the Italians make around special occasions. They are quite simple to make and very yummy! Bon appetit! Doug Pizelle Cookies Yield: 60 Pizelles Ingredients: 6 Eggs 3 ½ c. Flour 1 ½ c. Sugar 1 c. Margarine 4 tsp. Baking powder 2 Tbsp. Extract Procedure: • Melt butter in pot over the stove on low heat (DO NOT MICROWAVE) • Beat eggs and sugar gradually until smooth • Add cooled melted margarine and extract • Sift flour and baking powder • Add dry ingredients to egg mixture • Dough will be sticky enough to drop onto hot iron by spoon • Shape while hot • Store in an air tight container ***If making chocolate pizelles, add to the dry ingredients: ½ c. cocoa ½ c. sugar ½ tsp. baking powder
